Goan Bebinca - A multi layered Goan Christmas Delicacy.

Bebinca is a classic traditional Goan Layered Dessert. It is also known as bibic or bebinka. Bebinca is a delicacy made during all festive occasions in Goa especially during Christmas. It’s like a pudding which has 7 layers. It depends how many layers you want to make more Or less. It contains flour, eggs, sugar, coconut milk and nutmeg powder

Make Bebinca this Christmas and make your holidays special. You need to be patient to make this as this takes quite a lot of effort and time (Roughly 3 Hrs) but it’s worth every bit. 

Bebinca stays for a longer time and can be stored for 2 weeks in your fridge. In Goa it’s made in an ancient style of cooking however I have baked them in an oven.

INGREDIENTS
Plain Flour                    175 gms
Coconut Milk                250 gms
White Sugar                  200 gms
Egg Yolk                       6
Butter                            200 GMS
Nutmeg Powder        1 Teaspoon
A Pinch of salt


Preparation Steps
  1. Preheat oven to 180°C exactly fifteen mins before baking. Grease a round tin Or loaf pan with 2 tbsp butter.
  2. Take a mixing vessel combine coconut milk and sugar. With the help of electric beater beat until sugar dissolves.
  3. Add one egg yolk at a time and beat until they all mix nicely.
  4. Now add flour, 1 tbsp butter and salt. Beat all nicely.
  5. Pour ½ cup of batter and bake for 20 mins. Monitor frequently. Ensure the top layer is slightly brown but not burnt.
  6. Now spread some butter over it with the help of brush. Sprinkle little cardamom powder.
  7. Repeat Steps 5 and 6 till you run out of batter.
  8. Allow to cool completely. Unmould the pan gently with a tap from behind. Slice bibinca and serve warm Or cold with a dollop of ice cream.
